- 2 tablespoons white miso paste
- 1 tablespoon soy sauce (or tamari for a gluten-free option)
- 1 tablespoon rice vinegar
- 1 tablespoon maple syrup
- 1 teaspoon fresh ginger, grated
Directions
-
Prepare the Collard Wraps: a. Trim the thick stem from the center of each collard green leaf to make it easier to roll. b. Lay the collard leaves flat, add avocado slices, sauerkraut, julienned carrots, and broccoli sprouts along the center of each leaf.
-
Assemble the Wraps: a. Fold in the sides of the collard leaf and then roll it tightly from the bottom to form a wrap. b. Place the wraps seam-side down to secure them.
-
Make the Ginger Miso Almond Butter Dressing: a. In a bowl, whisk together almond butter, miso paste, soy sauce, rice vinegar, maple syrup, grated ginger, minced garlic, and water until smooth. b. Adjust the water quantity to achieve your preferred dressing consistency.
-
Serve: a. Slice each collard wrap in half at a slight diagonal. b. Serve the wraps with a side of the Ginger Miso Almond Butter Dressing for dipping or drizzling.
Enjoy: a. Indulge in the refreshing and crunchy goodness of these Collard Wraps with the delightful combination of avocado, sauerkraut, carrots, and broccoli sprouts. b. Dip or drizzle with the Ginger Miso Almond Butter Dressing for an extra burst of flavor.
