Ingredients
For the Bison Patties:
- 1 pound ground bison
- 1/4 cup finely chopped red onion
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon smoked paprika
- Sea salt and black pepper to taste
- Avocado oil for cooking
For the Lettuce Wraps:
- Gem Lettuce Leaves
- Sliced tomatoes
- Sliced red onions
- Sliced pickles
- Sriracha (optional)
- Avocado slices
Directions
- Prepare the Bison Patties:
In a mixing bowl, combine the ground bison, garlic, oregano, smoked paprika, salt, and black pepper.
Gently mix the ingredients until they are well combined. - Form the Patties:
Divide the bison mixture into 4 equal portions. Shape each portion into a burger patty, about 1/2 to 3/4 inch thick. Make an indentation in the center of each patty with your thumb; this helps the burgers cook evenly and prevents them from puffing up. - Cook the Bison Patties:
Preheat a grill pan or skillet over medium-high heat.
Lightly oil the grill grates or skillet with avocado oil to prevent sticking.
Grill the bison patties for about 3-4 minutes per side for medium-rare to medium doneness.
The internal temperature of the patties should reach 130-140°F (54-60°C) for medium-rare, or 145-160°F (63-71°C) for medium. - Assemble the Lettuce Wraps:
Carefully separate large lettuce leaves to create “buns” for your bison burgers.
Place a bison patty on a lettuce leaf.
Top with sliced tomatoes, red onions, pickles, and avocado slices.
Drizzle with siracha.
